Paring knife sharpening, right to the tip.
The paring knife does the fiddly work: peeling, hulling, trimming and coring, nearly all of it at the tip. Paring and bird’s-beak knives are sharpened on whetstones at the angle they left the factory with, right out to the point, and come back ready for the chopping board.

Most of a paring knife’s work happens at the tip.
A chef’s knife wears along its belly; a paring knife wears at its point, because that is where it peels, scores and cores. A pull-through sharpener rounds that last centimetre off, which is why so many paring knives end up with a blunt, stubby tip.
Each knife is sharpened on whetstones at its existing angle, carried all the way out to the point, the burr removed, and the edge checked along its length before it is packed. Whetstones never get the steel hot, so the temper at the thin tip is kept. Turnaround is 7 to 11 business days.
- Whetstone-sharpened at the factory angle
- Edge carried right out to the tip
- No heat, so the temper is kept
