Serrated knife sharpening, scallop by scallop.

Bread knives, steak knives and serrated deli slicers sharpened the way they were made: each scallop honed with a tapered ceramic rod, the burr taken off the flat side, and the teeth left at full height. Nothing is ground flat, so the knife bites through crust and tomato skin again instead of tearing it.

Why a serrated knife can’t go on a grinder.

A serrated knife cuts with its points first and its scallops second. The points bite into crust or skin, then the hollows slice as the blade moves. Run one across a flat stone, a belt or a pull-through sharpener and the points get ground off, leaving a knife that is neither serrated nor straight and tears everything it touches.

Each scallop is honed on its own with a tapered ceramic rod sized to the hollow, working the bevelled side at the factory angle. The burr is then taken off the flat back with a light pass so the teeth stay full height, and every knife is checked and test-cut before it goes back. Turnaround is 7 to 11 business days.
